Produced by a fourth generation family of Mezcaleros, pias are heated 4 6 days in six ton, volcanic rock lined earthen pits and cooled for 24 hours prior to crushing. Tahona wheels, pulled by horses, demolish the agave one ton at a time, and fermentation occurs between 2 8 days before double distillation
